Saffron Cake with Coconut Milk

Ingredients:

  • 2 eggs
  • 130g granulated sugar
  • 70g vegetable oil
  • 250g flour
  • 50g coconut flour
  • 150g coconut milk
  • 1g saffron
  • 1 teaspoon rum
  • 125g powdered sugar
  • 3 tablespoons coconut milk

Method:

Step 1

Preheat the broiler to 180C. Heat the coconut milk, add the saffron, and then beat the eggs with the sugar. Add the vegetable oil, and continuously add the two sorts of flour substituting with the coconut milk and blend. Lastly, add the baking powder and the rum.

Step 2

Margarine and flour a cake dish or line it with wax paper, then, at that point, add the player. Heat the cake for around 35 minutes. Remove the cake from the stove and let it cool.

Step 3

To set up the icing, place the powdered sugar in a bowl, add the coconut milk, mix until the icing is thick.
