Ingredients:

  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup whole milk
  • 2 cups all-purpose flour
  • ½ teaspoon ground cardamom
  • 2 tablespoons bloomed or ½ teaspoon saffron thirds
  • 1 tablespoon rose water
  • 2 teaspoon baking powder
  • ¼ teaspoon salt

Instructions

Step 1

Set the oven range to 175oC to preheat and line the muffin pan with liners/baking paper. Beat eggs sugar in the large-size mixing bowl until fluffy and light, about 5 minutes.

Step 2

Combine the oil and milk and mix for one minute. Combine the bloomed saffron, rose water, cardamom, and mix thoroughly. Place in and mix the flour, baking powder, salt in the other mixing bowl.

Step 3

Combine the dry ingredients with the wet ingredients. Caution: Do not over-mix. Mix in the pistachios. Place the batter evenly into the muffin liners. Bake for 18-20 minutes.

Remove and cool. Then serve and enjoy.
