Saffron, Pistachio & White Chocolate Cookies

Ingredients

  • 1⁄2 teaspoon baking powder
  • 200g white chocolate
  • 30ml milk
  • large squeeze saffron
  • 220g margarine, softened
  • 1 egg
  • 100g caster sugar
  • 100g brown sugar
  • 300g flour
  • 100g pistachios, generally slashed

 

Method

Step 1

Warm the milk in a dish with saffron. Once steaming, turn off the heat, then put in the cooler to chill thoroughly. Whisk the egg along caster sugar until it gets light – this will take around 3-5 mins, then add the cooled spread and light natural sugar and whisk quickly to join.

Step 2

Overlap in the chocolate and pistachios, then, at that point, tip the combination onto baking material. Fold the fabric, make it thick, conservative log, and create a wafer shape. Enclose by stick film, then, at that point, put in the fridge for at minimum two or three hours to chill – leave it overnight.
