Saffron Couscous

Ingredients:

  • 5 saffron threads or more to taste
  • 1 cup couscous
  • 1 cup vegetable broth
  • ¼ cup dried currants
  • Salt to taste
  • 2 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon harissa or to taste
  • 1 celery stalk chopped
  • ½ teaspoon ground cumin
  • 2 tablespoon warm water

Instructions:

Step 1

In a bowl, combine warm water and saffron. In a saucepan, combine couscous and vegetable broth; bring to a boil. Remove saucepan from heat, cover, and set aside for 5 minutes—fluff with a fork and transfer couscous to a bowl.

Step 3

In a large mixing bowl, combine the saffron mixture, celery, currants, olive oil, lemon juice, harissa cumin, and sea salt.

Last Step

Chill before serving (about 30 minutes), then enjoy.
